Before the sun rises, the process begins. Organic flour. Filtered water. Sea salt. A wild starter we’ve been nurturing for years. Nothing else. No additives. No shortcuts. Just patience — and the quiet work of fermentation doing what it does best.
Our dough rests anywhere from 24 to 36 hours. Slowly developing its tang, its texture, its soul. By the time it reaches the oven, it’s already alive with flavour — deep, earthy, and a little bit wild. Every loaf is hand-shaped, baked in small batches, and served the way bread should be: still warm, still breathing, still carrying that smell that stops you mid-step. It’s the same bread we serve for brunch — under poached eggs, beside coffee, shared between friends. The kind people cross Alicante for.

Each loaf is one kilo — ideal for sharing, gifting, or keeping all to yourself (we won’t judge).
Here’s how it works:
Next-day pickup for one loaf — order before 10:00 a.m. the day before.
2+ loaves need at least 3 days’ notice, so we can work them into our fermentation schedule.

Keeping it fresh (if it lasts that long)
Let’s be honest — most loaves don’t make it past day one. But if yours somehow does:
Wrap it in a tea towel or paper bag to keep the crust crisp.
It stays perfect for up to two days at room temperature.
For longer storage, slice and freeze it — then toast straight from frozen for that just-baked crunch.
